2.25kg with two bones will be 6 hearty portions

Rub with plenty of salt and pepper, place the meat in a large roasting tray and put into a pre-heated oven at 200°C for 20 minutes. Turn down the oven to 160°C and allow a further 20 minutes per 450g for medium and 15 minutes per 450g for rare.
