Pork Shoulder- Boned & Rolled


2kg joint will serve 6-8 guests

Rub scored skin with salt before placing the joint on a bed of onions, carrots and celery. Roast in a preheated oven for 30 minutes per KG of meat. While cooking baste the meat with the cooking juices to keep it moist. Leave to rest. If you want extra crispy crackling – untie, remove crackling and pop back into the oven until crisp.
